1. Can Ozone Eliminate Nitrite?

Ozone can oxidize nitrite and make it become nitrate, as well as eliminate nitrate. The capability of ozone oxidation varies for different substances.

Below is the formula:
NO2-(nitrite) + O3 → NO3-(nitrate) + O2

2. Does ozone react with the residual chlorine in the water to generate carcinogenic substances such as hypochlorite?

Ozone reacts with chlorine then generates hypochlorite. However, hypochlorite will oxidize and disappear.

Therefore, hypochlorite is a temporary substance which will also disappear after 20 to 30 minutes.

The Environmental Protection Administration, Executive Yuan, R.O.C. (Taiwan) demonstrated the safety with a report released on Nov. 24, 1997, "Ozone as a Pharmaceutical Method to Process Drinking Water." Additionally, Europe has used ozone to process tap water and waste water for over 100 years, showing that ozone is safe to sanitize water with.

※ Trihalomethanes are a byproduct which is generated by the reaction between organic substances and chlorine. Trihalomethanes are less toxic than dioxin.

3. Does ozone react with the protein of the meat to generate nitrite?

Ozone reacts with the protein of the meat and generates nitrite, which is oxidized to nitrate by ozone. The nitrate then eventually disappears.
